Cinnamon Tea cake

This Tea cake is deliciously buttery and moist with a beautiful cinnamon flavour. It is perfect with a cup of tea.

The flavour of warm spices like cinnamon makes this Dutch girl very happy, and the lack of inflammatory ingredients like wheat flour makes my tummy happy! I know you will enjoy it too!

It is gluten free, refined sugar free and additive free, but definitely not flavour free.

 

What You Need.

  • 125g almond meal

  • 60g tapioca or arrowroot flour

  • 25g coconut flour

  • 100g softened butter

  • 80g coconut sugar

  • 100g coconut milk (or almond if you prefer)

  • 2 eggs

  • 2 tsp cinnamon

  • 2 tsp baking powder

  • 1 tsp vanilla

  • pinch sea salt

  • Cinnamon or vanilla sugar for dusting


What To Do.

  1. Preheat oven to 170C and line a small cake or loaf tin.

  2. Mix all ingredients until well combined.

  3. Pour into your cake or loaf tin and bake for approximately 40 mins or until a skewer comes out clean.

  4. Allow to cool slightly before dusting with cinnamon or vanilla sugar, then leave to cool on the rack before cutting (though this is so freaking good served slightly warm as well)!
