a NOURISHING, WARM BREAKFAST FOR THOSE COOL WINTER MORNINGS.
A simple alternative to oats for those who can’t tolerate gluten or grains. With two of my favourite spices, cinnamon and nutmeg, a bowl of this will leave you feeling warm and satisfied!
Serves 2.
WHAT YOU NEED.
2 apples, cored and quartered (and peeled if you’re not lazy like me!)
70g cashews
50g desiccated or shredded coconut
50-60g coconut cream (or dairy cream if you prefer)
20-40g butter
1-2 Tbsp collagen or protein powder
1 tsp ground cinnamon
1/4 tsp ground nutmeg
Pinch ground cloves
What To Do.
Add cashews and coconut to your Thermomix bowl or food processor and blitz until chopped well (speed 8 or 9 in your Thermomix or medium to high in your food processor). You can have chunky or fine, depending on what you like. You could also just chop these with a knife if you don’t mind it a chunkier consistency.
Add cored and quartered apples along with remaining ingredients and chop or grate (speed 4 in a Thermomix or low in a food processor). You could also grate by hand.
If using a Thermomix, cook for approximately 10 mins at 90 deg C on speed 1. If you are using a saucepan to cook, don’t add the butter in the previous step, add it to a saucepan, add your remaining ingredients and cook over low-medium until apples are soft.
Once cooked, add to your bowls and serve with an extra dollop of cream, a sprinkle of cinnamon and fresh berries if you like.
