Banana, Blueberry &

Walnut Loaf

Who doesn’t love a banana loaf of some description?! This one is simple and delicious, my two favourite things about a recipe!

The original recipe is by skinnymixers which I found on Pinterest, but I have altered it very slightly plus added blueberries as I had some blueberries that were a bit tart and didn’t want to waste them. I think slightly tart blueberries are the best in this cake!

This is yummy on it’s own, slathered with butter or even toasted slightly for breakfast!

 

What You Need.

  • 330g raw almonds or almond meal

  • 3 eggs

  • 250g ripe banana (approx. 3 bananas)

  • 70g coconut oil (or butter)

  • 30g honey (or sweetener of choice)

  • 2 tsp cinnamon

  • 1 tsp vanilla bean paste

  • 1 tsp bicarb soda

  • 70g walnuts

  • 70g dates

  • 100g blueberries

  • Dessicated coconut to sprinkle on top


What To Do.

  1. Preheat oven to 180C and line your loaf tin with baking paper.

  2. Place dates into your thermomix bowl and chop on speed 8 for approx. 3 secs or until they are chopped to your liking.

  3. Add the walnuts and chop on speed 5 for another 3 secs. You still want the walnuts chunky. Set aside.

  4. If using whole almonds, mill them on speed 9 for approx. 10 secs or until fine. Do this in 2 batches, placing the first batch aside before adding the second batch. If using almond meal, just weigh this into the bowl.

  5. Add all remaining ingredients except dates, walnuts and blueberries and mix on speed 5 for 15 secs.

  6. Scrape down the sides and add the dates, walnuts and blueberries and fold through on reverse speed 3-4 for 5 secs.

  7. Pour batter into loaf tin, sprinkle coconut on top and bake for about 45 mins or until a skewer comes out clean.

  8. Allow to cool on cake rack for 5 mins before removing from tin. Try to wait for it to cool completely before slicing

    If you don’t have a Thermomix, no problems! You can just use whatever food processor you have or you can chop, mash and mix everything by hand and just use almond meal instead of milling whole almonds. It is still a very easy recipe.
