Lemon Fat Bombs

When life (or your neighbour) gives you lemons … make Lemon Fat Bombs!

These are the BOMB! Seriously, if you love lemon and you’re looking for a mid-morning or afternoon treat, then these little fat bombs will keep you feeling satisfied for ages.

I decided to make these keto-friendly by using stevia to sweeten, but if you don’t mind a bit of natural sugar, try using a little maple syrup to sweeten instead. Start with a teaspoon at a time and add more to your liking. Same goes with the lemon, you could start with using just one lemon or about 5 drops of lemon essential oil, but if you’re like me and you like it quite zingy, you could use two lemons or more lemon drops.

Please make sure the essential oil you are using is food grade. I use DoTerra oils as they are high quality and most of them are safe for use in foods, but always check the labels. Their lemon one is definitely safe.

 

What You Need.

  • 1-2 lemons, zest and juice (or 5-10 drops of lemon essential oil)

  • 250g cream cheese

  • 100g butter

  • 100g coconut oil

  • 75g coconut butter

  • Stevia (or maple syrup) to taste


What To Do.

  1. Place all ingredients into your Thermomix bowl or food processor and blitz on high speed until well combined and the zest is finely grated.

  2. Pour mixture into a lined slice tray and spread evenly.

  3. Place into the fridge to set, then slice into squares and store in the freezer.
